I don’t know much about making planters, just that wood doesn’t last forever. You can also get a wood preservative or sealer meant for outdoor wood, which would be for end grain (ends of the boards) in contact with the ground or water, and could put that on all the cut ends.
I do suggest finishing both the insides and outsides to protect the wood from the water, letting it cure as long as you can before filling it. If this was construction pine, it’s already more dry than outdoor wood in order to meet building codes. Not sure if you’re in a dry season/climate right now. Often with things like fencing and outdoor wood, you want to let it dry as much as possible before finishing. There are pure linseed oil products with no solvents in them also available, but I think an opaque stain would offer more UV protection to the wood (if you read about protecting wood fences from sun and water, it’s said paint is best, then opaque stain, then clear stains) The oil based paints and stains and varnishes do have drying solvents in them, so I wouldn’t use them in things that are actually food contact, but since this is outside, it will have plenty of time to off gas the VOCs and for the finish to fully cure and harden, plus by using plastic barrier of some kind, it’s not really going to contaminate the soil as long as it isn’t allowed to flake off. I was also going to suggest linseed oil or a linseed oil based stain, opaque stain or even paint!
